Crockpot Maui Chicken

Super simple, one dish recipe that makes FANTABULOUS Hawaiian style chicken.  The chicken practically falls apart and even using just breast meat is so juicy it will amaze you.

Prep Time: 10 Minutes  Cook Time: 4-6 hours in slow cooker

INGREDIENTS

  • ¼ cup Peanut Butter
  • 2 lbs Chicken
  • 1 Tbsp. Vegetable Oil
  • 20 oz. Can Pineapple Chunks
  • 1/2 cup Packed Brown Sugar
  • 2 Garlic Cloves Minced
  • 14 ½ oz can Chicken Broth
  • ¼ cup Apple Cider Vinegar
  • 2 Tbsp Brown Sugar
  • 2 tsp Soy Sauce
  • 1 Medium Green Bell Pepper Chopped
  • 3 Tbsp Cornstarch
DIRECTIONS
  1. Brown chicken in oil, 1 minute per side. Transfer to slow cooker.
  2. Add Pineapple Chunks and Bell Peppers to slow cooker.
  3. Combine remaining ingredients and pour over chicken.
  4. Cover and cook on high for 4-6 hours. Shred chicken once done.  Serve over rice.

NOTES: You can serve this over rice (as pictured above) or for something a bit different, put it in a wrap and you won’t regret it.  Wondering about the peanut butter?  It kind of helps to meld the flavors together and tie the thing together.  You can also use powdered peanut butter if you like.
