The good news is, this seems much harder than it actually is…which means when your loved ones taste it, you are gonna feel like a rock star. Also, it’s a one-pan dish…which makes it totally worth it.
PREP TIME: 10 Minutes COOK TIME: ~30 Minutes
- 1 lb chicken breast tenderloins, cubed
- 10 oz cheese ravioli (I used Buitoni)
- 2 tbsp olive oil
- 1 tsp oregano
- 5 garlic cloves, minced
- 1 small sweet onion, chopped
- 6 oz fresh spinach
- 1 can of diced tomatoes, Italian style
- 1.5 cup chicken broth
- 3/4 cups heavy whipping cream
- Preheat a large deep skillet over medium heat. Add oil and let it heat up until it shimmers…
- Add garlic and onions stir and saute until fragrant. (Don’t burn the garlic…)
- Add chicken and stir till no pink is exposed (it won’t be cooked through yet anyway)
- Add diced Italian Style Tomatoes and oregano, stir together.
- Add chicken broth and Ravioli, cover and let simmer for 5 minutes…
- Stir in heavy cream, mixing thoroughly throughout the dish
- Add spinach, then cover and allow to simmer 5 minutes…stir in wilted spinach and serve.
NOTES: You could substitute the diced tomatoes for sun dried tomatoes, or even fresh tomatoes and this would be a very good dish.
