Creamy Tuscan Chicken Ravioli

The good news is, this seems much harder than it actually is…which means when your loved ones taste it, you are gonna feel like a rock star. Also, it’s a one-pan dish…which makes it totally worth it.

PREP TIME: 10 Minutes COOK TIME: ~30 Minutes

  • 1 lb chicken breast tenderloins, cubed
  • 10 oz cheese ravioli (I used Buitoni)
  • 2 tbsp olive oil
  • 1 tsp oregano
  • 5 garlic cloves, minced
  • 1 small sweet onion, chopped
  • 6 oz fresh spinach
  • 1 can of diced tomatoes, Italian style 
  • 1.5 cup chicken broth
  • 3/4 cups heavy whipping cream

  1. Preheat a large deep skillet over medium heat. Add oil and let it heat up until it shimmers…
  2. Add garlic and onions stir and saute until fragrant. (Don’t burn the garlic…)
  3. Add chicken and stir till no pink is exposed (it won’t be cooked through yet anyway)
  4. Add diced Italian Style Tomatoes and oregano, stir together.
  5. Add chicken broth and Ravioli, cover and let simmer for 5 minutes…
  6. Stir in heavy cream, mixing thoroughly throughout the dish
  7. Add spinach, then cover and allow to simmer 5 minutes…stir in wilted spinach and serve.

NOTES: You could substitute the diced tomatoes for sun dried tomatoes, or even fresh tomatoes and this would be a very good dish.
