Steak, Berries, & Walnut Salad

So…I went to a restaurant and ordered this salad…but I didn’t get this salad…I got wilted lettuce, overdone shoe leather steak, no berries, the wrong kind of dressing, and no walnuts. So…I went home and made it myself the next day just to get the LOUSY taste out of my mouth from the night before. (Yes my wife made fun of me.)

PREP TIME: 15 Min COOK TIME: 10 Min SERVES: 4

INGREDIENTS

  • Steak Tips (about a pound: See Note 1)
  • Spring Mix Lettuce (See Note 2)
  • Medium Cucumber
  • 8 oz Blueberries
  • 8 oz Strawberries
  • Walnuts
  • Blue Cheese Crumbles (See Note 3)
  • Blueberry Vinaigrette Dressing

DIRECTIONS

  1. This is very simple…grill your steak tips like you like them, whether that’s rare, medium rare, or medium (If you’re doing tips “medium well or well done” then I need you to seek help immediately)
  2. Assemble a little bit of everything on 4 plates, drizzle with the vinaigrette…seriously…it’s a salad…not super complicated.

NOTES: 1) I soaked mine in Dr Pepper a couple of hours, then rubbed them in brown sugar and chipotle pepper mix. Honestly the sweet and heat is important here but…do as you like. 2) You can also use arugula, but maybe not Romaine…I like this salad to be soft and yielding…romaine can be hard sometimes and I don’t think it works too well. 3) Gorgonzola works well if you’re not into Blue or Feta cheeses.
