Flank Steak Pinwheels

This recipe combines savory marinated steak with the sweetness of peppers and onions, the creaminess of provolone, and the freshness of spinach, creating a delightful and visually appealing dish.

Ingredients:

  • 1 large flank steak
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 large onion, thinly sliced
  • 6-8 slices of provolone cheese
  • 2 cups fresh spinach leaves
  • Salt and pepper to taste
  • Toothpicks or kitchen twine

Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. Prepare the Marinade:
    • In a small bowl, whisk together the olive oil, balsamic vinegar, minced garlic, Dijon mustard, dried oregano, salt, and pepper. Set aside.
  2. Prepare the Flank Steak:
    • Place the flank steak on a cutting board. Cover with plastic wrap and use a meat mallet to pound it evenly until about 1/3 inch thick. (You’re gonna have to roll it so thinner without being see through is better)
  3. Marinate the Steak:
    • Place the flattened flank steak in a shallow dish or resealable plastic bag. Pour the marinade over the steak, ensuring it’s well coated. Let it marinate in the refrigerator for at least 2 hours, or up to overnight for maximum flavor.

  4. Assemble the Pinwheels:
    • Remove the steak from the marinade and lay it flat on a clean surface.
    • Layer the provolone cheese evenly across the steak, leaving a small border.
    • Spread the peppers and onions over the cheese, followed by the spinach leaves.
  5. Roll the Steak:
    • Starting from one end, carefully roll the steak tightly into a log. Secure the roll with toothpicks (I used kebab skewers actually) or kitchen twine at 1-inch intervals to keep the filling intact.
  6. Slice the Pinwheels:
    • Use the skewers as your guide and cut the log into pinwheels at regular intervals trying to keep them even.
  7. Grill the Pinwheels:
    • Place them on the grill (I used my kebab skewers to facilitate this and it worked amazingly well). Cook till cheese is melted, steak is done.
  8. SERVE:
    • I served mine with rice but you could serve a kabillion other sides.

NOTES: 1) If you want to cook the veggies a bit more soft than I did, In a large skillet over medium heat, sauté the sliced peppers and onions until they are soft and slightly caramelized, about 8-10 minutes. Set aside. 2) You can also do this in the oven at 375 for about 30 minutes.
