If you like Chinese food this is a pretty good recipe for a quick dinner, especially quick if you cube the pork beforehand.
Ingredients
- 1lb of pork chop, Cut into 1/2 inch pieces.
- 1/4 cup cornstarch
- 2 Tbsp cooking oil
- 2 Tbsp garlic cloves, minced
- 2 tsp freshly grated ginger
- 1/4 cup low-sodium soy sauce
- 1/4 cup pineapple juice
- 1/4 cup dark brown sugar
- 2 green onions, green parts only, thinly sliced
- Salt and pepper
DIRECTIONS
- Add the cornstarch and the pork pieces to a medium bowl, mix throughly until evenly coated.
- Add the oil to a large skillet and heat over medium-high heat. Shaking off any extra cornstarch, add the pork pieces in the heated pan (do not overcrowd the pan, do in batches if needed). Cook the pork for 6-8 minutes, flipping the pieces and stirring occasionally. Transfer the pork to a plate and set aside. Season with a pinch of salt and pepper
- While pork is cooking in a bowl whisk together, soy sauce, brown sugar,and pineapple juice.
- In the same skillet from pork, add the minced garlic and grated ginger. Cook for 30 seconds.
- Pour in the soy sauce mixture, bring to a simmer over medium high heat. Add the pork and cook for 3-5 minutes or until the sauce has thickened.
- Serve with rice and top with green onions
