Steak Bruschetta

INGREDIENTS

2- 8oz NY Strip Steaks
2- Roma Tomatoes, Diced
1- Small White Onion, Chopped
1- Clove Garlic, Minced
2- Tbsp Extra Virgin Olive Oil, Divided
Shredded Mozzarella
Shaved Parmesan
Basil, Salt, Pepper, Thyme, to taste

DIRECTIONS

  1. Preheat broiler to HIGH.
  2. In a small bowl, mix together tomatoes, onions, garlic, basil, thyme and half the olive oil, season steaks with salt and pepper.
  3. Heat remaining olive oil in a 10-inch cast iron skillet over medium-high heat. Sear steak 2 to 3 minutes on each side or until deep golden brown. Remove from heat and let rest for 2 minutes…then slice on the bias…top steaks with tomato mixture.
  4. Broil steak 3 to 4 minutes in oven until cheese is slightly melted. Remove from oven…and serve
