Balsamic Honey Chicken and Pears

This is my take on a recently popular recipe on NOOM and some other sites. Easy to do, super good flavor.

INGREDIENTS

  • 4 Boneless, Skinless chicken breast halves
  • Salt
  • Black Pepper (Ground)
  • 1 T extra virgin olive oil
  • 2 cloves garlic, chopped
  • 2 medium Bosch Pears, peeled, cored, sliced
  • 1/2 cup of Chicken Broth
  • 1/4 cup balsamic vinegar
  • 1.5 T honey
  • 1.5 teaspoons of starch
  • 1/4 cup of Rum

DIRECTIONS

  1. Place each chicken breast between 2 pieces of plastic wrap and pound them flat to about 1/2 inch thick. Season with salt and pepper on both sides.
  2. In a large skillet, heat the oil over medium high heat, and the chicken and cook for about 2 minutes on each side turning once. Remove from skillet and place on plate.
  3. Add garlic to skillet, stir around till garlic is soft…then add rum and pears, let cook 3-4 minutes, stirring occasionally until pears are soft and golden brown.
  4. While pears are cooking in a bowl combine the remaining ingredients and stir vigorously. (You may want to heat the honey a bit, so it mixes with the others a bit better.) Pour over the pear mixture, turn up the heat till it begins to boil then quickly lower heat to where it will simmer…add chicken back to the pan. Cook 4-6 minutes or until sauce begins to thicken. Remove and serve, drizzling sauce on top of pears and chicken

NOTES: I served this on rice, with a side of green beans and tomatoes…it was pretty darn good that way, but I am prone to liking tomatoes in almost any form.
