Luau Chicken and Rice

My Mema called this “Luau Chicken and Rice” and for the life of me I don’t know why. To my knowledge she has never been to Hawaii or a Luau. I found it in an old church cookbook of hers listed under Luau Chicken and Rice but she probably submitted that so IDK. Anyway…my kids loved this when they were little. It’s super easy to make. It tastes good and is filling pretty quickly

Ingredients

1.5 Cups of instant white rice (SEE NOTE 1)
1 can Cream of mushroom soup (SEE NOTE 2)
1 can Cream of chicken soup
1 Can Cream of Celery Soup
1 lb. of boneless, skinless chicken tenders (about 6 pieces)
Salt and pepper

Directions

  1. Pre-heat oven to 375°
  2. In a mixing bowl, combine all 3 soups (SEE NOTE 3)
  3. Add in uncooked rice and stir until completely mixed
  4. Season chicken as desired
  5. Prepare baking dish with non-stick spray
  6. Pour soup and rice mixture into baking dish
  7. Place chicken over the soup and rice in the baking dish
  8. Cover with foil
  9. Bake for 50-60 minutes or until the chicken is cooked through

NOTES: 1) You CAN use regular rice it just takes a bit longer to cook and you should add 1/4 cup of water 2) Buy Campbell’s. Yes it does make a difference. Budget brand “Cream of ” soups SUCK. 3)Honestly you can add flavor to this in lots of ways, I sometimes use some garlic salt, or onion powder. I particularly like to use sour cream in the soup mix for just a bit of tang. It’s a real easy recipe to screw with and bring out different aspects.
