Italian Sausage Rigatoni

Totally stole the base of this recipe from the guy on TikTok who does alot of one pan meals, “Your Barefoot Neighbor”. He’s got a couple of cookbooks out, I bought his “Keep it Simple Y’all” and it’s great. Highly Recommend. This dish is great and the original recipe would be too, but I like my mushrooms and need a green vegetable when I eat so I zhuzhed it up.

INGREDIENTS

  • 1lb Italian Sausage
  • 1 Bell Pepper, Diced
  • 1 Medium Sized Onion, Diced
  • 8oz Mushrooms
  • 4 cloves Garlic (Or 2Tbs of Garlic Powder)
  • 1 Tbsp Crushed Red Pepper
  • 2 Tbsp Tomato Paste
  • 10oz Can Tomato Sauce
  • 2.5 Cups of Chicken Broth
  • 8oz Rigatoni Pasta (I used the short version)
  • 1 Cup heavy Cream
  • 1 Cup Spinach
  • 4oz Parmesan cheese, grated

DIRECTIONS

  1. In a large deep frying pan over medium high heat, crumble up and brown your Italian sausage, making the pieces as small as possible..drain the grease.
  2. Add in Onion and Bell Pepper (I did both red and green bell pepper here) cook until vegetables soften
  3. Add garlic (or garlic powder), Mushrooms, Crushed red pepper flakes and tomato paste mix well for 1 minute.
  4. Add in tomato sauce, and chicken broth. Stir and cover to bring to a boil.
  5. Add rigatoni, cover and let simmer for 10-15 minutes till Rigatoni is at desired doneness.
  6. Add in heavy cream and let simmer until sauce begins to thicken.
  7. Add in Spinach and parmesan cheese, mix thoroughly and cover. Remove from heat, let sit for 5 minutes and serve.
